Chocolate Oatmeal Scotchies

Hey y'all! I hope Easter was as good for y'all as it was for me. So much good food and such great company. I am truly blessed to have such a wonderful family so close by me.

And one of those perks of living close to family is coming "home" to homemade foods. Which means, NO DORM FOOD FOR AT LEAST A DAY!!!!

On Easter, my auntie made these Chocolate Oatmeal Scotchies that were just to die for. Like OMG y'all. I wanted to eat every single cookie AND lick the plate. So, naturally, I got the recipe from my aunt to share with y'all...

Chocolate Oatmeal Scotchies

Ingredients:

  • 1 cup butterscotch morsels 
  • 1 cup semi-sweet chocolate morsels
  • 1 1/4 cups unsifted flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1 cup butter, softened
  • 3/4 cup brown sugar, firmly packed
  • 3/4 cup granulated sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 3 cups Old-Fashioned Quaker oats
1) Preheat oven to 375°F
2) Combine flour, baking soda, salt, and cinnamon in small bowl; set aside
3) Beat softened butter, granulated sugar, brown sugar, eggs, and vanilla extract in large bowl
4) Gradually beat in flour mixture
5) Stir in oats and morsels
*6) Drop by rounded tablespoons onto an ungreased baking sheet
*7) Bake 7 to 8 minutes for chewy cookies, 9 to 10 minutes for crisp cookies
*8) Cool on baking sheets for 2 minutes, remove to wire racks to cool completely

*PAN COOKIE VERSION
6) Grease 15x10-inch jelly-roll pan
7) Prepare dough as above
8) Spread in prepared pan
9) Bake for 18 to 30 minutes or until lightly browned
10) Cool completely in pan on wire rack


Makes 4 dozen (48 cookies)

How to Stay Organized

Hey y'all! So finals are coming upon us, so now's the time to get organized and ready to knock those tests out of the park. However, as a busy college student, life sneaks up on us and it's super easy to fall into disorganized chaos. Besides my notebooks, my laptop and my textbooks, here are a few things I always keep in my tote to help avoid disorganization. 

1) A planner. I love my Lilly P one too much
2) Colored pens. Great for color coding notes and events
3) Highlighters. Making sure no small detail goes unnoticed
4) Hair ties. When I pull my hair back, I feel like I can accomplish anything
5) Cosmetic bag. Good for keeping pens/pencils as well as lipgloss and mascara
6) Pencils. Because sometimes pens aren't enough
7) Glasses. You can't take notes if you can't see the board

What We Wear Out

Dallas is unlike any place on planet earth. It is a thriving city, with a host of colleges (private and public) and never ending attractions to attend. Like New York, Dallas is "the city that never sleeps" of the South. I love it.

This also provides a dilemma on what to wear for all of these potential events. Sometimes the dress code calls for class, and sometimes it calls for a little more of a wild take of life. 



Mid-Morning/Early Afternoon
Usually brunch after church or if the family is in town. Or some day long event like a fraternity Crawfish Boil or Boulevarding in the Fall.

Dinner/Night Out
These outfits are suitable for a dinner out or night exploring Dallas. They're very "Uptown"-worthy due to their 'edginess' yet present class.

Going Out


Going out at SMU is a real affair. Hair and makeup have to be perfect and every outfit planned to a T. An SMU girl can never leave without looking ready to party.

Haircut or No?

Hey y'all! So it's about that time when I start questioning every little thing about my life – do I weigh too much? Are my summer clothes going to fit? Why aren't diet shakes cheaper? Is my degree going to get me a job? – but none more debated than... Should I cut my hair?

I had a bob for the beginning of senior year in high school, after my hair had been 3/4 down my back in junior year. Now my hair is growing back (it has been close to two years since I cut it...) and I'm debating whether or not to go short again. I have the kind of face that can pull off a cute bob, but I also like longer hair for styling...

Because You're Worth It!


Hey y'all! So I got this nail color for free last Friday and I have gotten soooo many compliments on it. I honestly didn't know if I would like it at first (considering I'm a pink, orange and red girl all the way) but I was amazed to find out how great it looks on! It's kinda a dull metallic gold but when the sun hits it, it becomes a more rosy gold. Super perfect for early spring. I'm in love. You can buy the color at any drugstore nearest to you!

My Current Obsessions

Ray-Ban Aviators: 

I cannot LIVE without my aviators. I have a pair of Wayfarers that I absolutely love, but they don't fit under a ball cap the same way as aviators do. Seriously y'all. My last pair broke and I was devastated, so I immediately ordered up a new replacement pair. I just received the email that they arrived, so photos to come!

Lululemon Headband:

I bought this headband on a whim expenditure and regret nothing. This thing is so comfortable, stays on my head and looks nice with any of my "workout-chiche" outfits. Such a good purchase! 

Hard Tail Rolldown Yoga Pant:

If I could wear yoga pants all day every day, I would. Hard Tails are my absolute fave. They're durable, they look nice, and soooo comfortable. I bought mine in black with a pink tie-dye fold over. So perfect for this strange chill in Dallas recently. 

Lululemon Run Swiftly Shirt:
I have one in a lime green, instead of dark heather above. It is honestly one of the most comfortable shirts I own. I can go to class, run errands, go to the library, and workout in it and always look semi-put together. What more can a classy college student ask for?!

Over-Sized T-Shirt

I heart over-sized t-shirts. Like, no joke. I just won a Southern Tide frocket (frat pocket tee) on Friday and literally haven't taken it off. It's a size large and I'm typically a size small, but you know what at the Southern sorority girls say... Large is the new small! But seriously, they are perfect with a pair of leggings and sandals, a pair of norts and Free-runs, or just as a beach cover-up. I'm all about them!
